Cheddar Buttermilk Biscuits

Prep Time: 10 minutes plus rest time & bake time
Makes: 1 dozen

Preheat oven 425°F

3 cups AP flour
3 Tbsp sugar
3 tsp baking powder
1/2 tsp salt
1/2 tsp baking soda
1/2 cup cold unsalted butter, cut into small pieces
1 1/2 cup grated cheddar cheese

1 1/2 cup buttermilk (well shaken)
2 Tbsp milk or cream (for topping)


Instructions

Whisk flour, sugar, baking powder, baking soda & salt together in a large bowl.
Cut butter into flour mixture with fingertips until crumbly. 
​Add grated cheese & stir to combine.

Add buttermilk and stir with a fork until dough comes together. It will be shaggy and moist.
Turn dough onto lightly floured surface and gently kneed about 6 times. Pat into a 10-12” round. Wrap in plastic and refrigerate at least 30 minutes up to 24 hours.
Cut into 2" rounds or squares, brush with cream and bake 15- 20 minutes.
