Preheat oven to 350F while you prepare the filling 1 Tbsp Olive oil 2 medium onions, chopped 2 jalapeno peppers, diced 4 cloves garlic, chopped 2 tsp coriander 2 tsp cumin 2 tsp paprika 1 tsp red pepper flakes 1 14ounce can diced tomatoes 2 cups shredded turkey or chicken Tex Mex cheese tortilla wraps
Filling 1. heat oil in pan 2. sauté onions until translucent about 3-5 minutes 3. add jalepeno and cook about 2 minutes 4. add garlic and cook 1 minutes 5. add spices and S&P to taste 6. Add tomatoes cook for 5 minutes until slightly reduced
To Assemble 7. Spread 1 cup of the sauce on the bottom of a 9x13 pan 8. Add half of the remaining sauce to the shredded turkey/chicken 9. spread about 1/2 cup filling on bottom half of tortilla and roll it up like a burrito. Repeat with remaining tortillas and filling. Arrange the enchiladas in the prepared baking dish and cover with remaining sauce and top with shredded Tex Mex style cheese. 10. Cover with aluminum foil and bake 35 minutes. Remove foil and bake for 10 minutes to ensure cheese is melted. 11. Let rest 10 minutes before serving.
